Butterscotch Chocolate Chip Cookies

‘Tis the season for baking cookies! Spending a Sunday baking cookies and watching Christmas movies is one of my favorite things to do, ESPECIALLY if it’s snowing. This past weekend that is exactly what I did. I love baking typical chocolate chip cookies, but I wanted to mix things up a little. I had purchased butterscotch chips from the grocery store and figured they were perfect to pair with chocolate chip cookies. Thus was born: Butterscotch Chocolate Chip Cookies. Yum.

How Do I Make These?

Utilizing my stand mixer I combine: butter, brown sugar- mix until thoroughly combined, then add egg and vanilla extract until combined.

In a separate bowl combine the dry ingredients: flour, baking soda, sea salt. Pour into the stand mixer bowl with the wet ingredients. Slowly combine. Do not make the mistake of pouring it all in there at once. This concept took me forever to do. Add chips. Set dough sit for 30 minutes- 2 hours in the refrigerator. Scoop into balls. Bake. Enjoy. Enjoy again. And again.

This is a fantastic variation on the classic chocolate chip cookie. Bring it to your next cookie exchange, bake sale or share with friends. Also a great option: never let these leave your house and share with your family.

Butterscotch Chocolate Chip Cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 2 Dozen

Ingredients

  • Wet Ingredients:
  • 1 Stick of Butter
  • 1 Cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • Dry Ingredients:
  • 2 Cups Flour
  • 1 teaspoon Baking Soda
  • 1 Pinch Sea Salt
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Butterscotch Chips

Instructions

  1. Preheat Oven to 375 Degrees
  2. In a Stand Mixer or Large Bowl combine: butter, brown sugar
  3. Mix until thoroughly combined
  4. Add egg and vanilla extract until combined.
  5. In a separate bowl combine the dry ingredients
  6. Pour dry ingredients into the stand mixer bowl with the wet ingredients.
  7. Slowly combine.
  8. Add chips.
  9. Allow dough to rest of 30 minutes - 2 hours in refrigerator
  10. Scoop into balls onto parchment paper lined cookie sheet
  11. Bake 10 minutes, or until edges are golden brown
  12. Let Cookies sit and cool 5 minutes

One of my favorite foods to enjoy throughout the year is a nice crisp apple. I love apples. They could be one of my favorite fruits and possibly foods. They are refreshing, filling and energizing. After spending a fall afternoon at an apple orchard and coming home with an overwhelming amount of apples from our trip, I decided to try out a new apple recipe. Skillet Cinnamon Apples.

This side dish can also pass for a dessert. It’s delicious. I actually ate it as a snack and then made another batch for a side dish for dinner. It takes me back to road trips with my parents up to Wisconsin and stopping for lunch at Cracker Barrel. I would always order baked apples as my side dish because.. yum.

How Do I Make it?

Start by peeling your apples and coring them.Slice the apples. I like the apples to be slightly thinner than a usual apple slice, but that’s just my personal preference. Cook the apples by sauteing butter in a medium sized pan, add the apples, sprinkle a little sea salt and cinnamon. Saute and let the apples cook down. Add a little more butter for taste if you’d like. Allow apples to cool slightly.

Top with vanilla ice cream to serve as a slightly healthier dessert or enjoy as a snack. This is a very simple side dish, snack or dessert that everyone will enjoy.

  • 2 Tablespoons Butter
  • Pinch Salt
  • 1/2 Teaspoon Cinnamon
  • 1/8 C Brown Sugar

Instructions

  1. Slice the apples into wedge slices
  2. Saute butter in a medium sized pan, add the apples,
  3. Add salt, cinnamon and brown sugar
  4. Saute and let the apples cook down.
  5. Add a little more butter for taste.
  6. Allow apples to cool slightly.

Pumpkin Spice Snickerdoodles

In keeping with my pumpkin spice fall festive flavors, I wanted to whip up another take on a fall favorite: the pumpkin spice snickerdoodles. With all of my cookie recipes, I try to make the delicious treats healthier than the traditional cookies we all grew up eating. While I LOVE sugary sweet cookies it’s also important to remember that sugar is not great to eat and consuming your recommended limit in cookies isn’t the greatest thing to do. These cookies grab a little natural sweetness from the addition of pumpkin and the unique flavor of pumpkin spice. Delicious and slightly less guilt filled.

How Do I Make These?

Start by mixing all of the dry ingredients together in a medium sized bowl. Mix the wet ingredients in another medium-large bowl. I used my KitchenAid to mix the cookie dough, so I put the wet ingredients in the KitchenAid bowl. Slowly add the dry ingredients to the wet ingredients while mixing. Mix everything thoroughly until combined. Refrigerate dough for 30 minutes. This is a step I recently added to my cookie baking repertoire and it’s a life changer. Just trust me. It’s like marinating meat. It takes time but makes a huge flavor difference. If you’d simply don’t have time it’s okay though. These are still delicious. Scoop dough into cookie dough balls and roll or top with sugar and pumpkin spice mixture. Finally bake 12 minutes on 375 degrees.
